What better way to celebrate Earth Day than with this delicious roasted vegetables healthy recipe? A Johns Hopkins article mentions that producing meat and dairy products from cattle and goats emit a particularly high amount of greenhouse gases. The article also states that diets lower in animal products and higher in plant products are not only great for your health, but it benefits the environment through a “more efficient use of land, water, nitrogen, and other resources.”
Make this easy, delicious, healthy recipe in celebration of Earth Day for lunch or dinner!
Prep time: 20-30 minutes
Cook time: 40 minutes
Ingredients:
- Salt
- Olive Oil
- Vegetables: broccoli, Brussel sprouts, onion
Equipment:
- Aluminum foil (optional)
- An oven-safe baking dish
- Wash the broccoli, Brussel sprouts, and onion under running water. Afterward, soaking the vegetables in water with salt can also help to clean the vegetables further.
- Cut the onion into chunks, since they will shrink when roasted. Cut the crowns of broccoli into broccoli florets. Cut the stem of each Brussel sprout, and cut the Brussel sprouts in half.
- Bring out your oven-safe baking dish and place aluminum foil on it. Make sure the aluminum foil covers the entire surface area of the bottom of your baking dish, as well as the raised edges of your baking dish. Placing aluminum foil is an optional step, but it can help make the clean-up process easier!
- We want the vegetables to be as dry as possible for roasting so that they don’t end up steaming. It may help to dry the vegetables with a clean paper towel or clean cloth towel before putting the vegetables on the aluminum foil in your oven-safe dish. Spread the vegetables out as much as possible to allow the vegetables to cook evenly.
- Sprinkle salt to taste and drizzle olive oil onto the vegetables. Mix the vegetables with the salt and olive oil.
- Preheat the oven to 350 Fahrenheit. Roast the vegetables for 40 minutes total. Halfway through, at 20 minutes, flip and toss the vegetables so that the vegetables can be evenly roasted.
