We’ve promised to share healthy recipes with you this month and we’re starting off with my new favorite spring recipe just created called Herbed Chicken Tenders Quinoa Bowl. The ingredients for this recipe can be prepared ahead of time. Then take 5 minutes to assemble the ingredients just before you serve the Herbed Chick Tenders Quinoa Bowl healthy recipe for lunch or dinner.
Make a simple healthy recipe for an Herbed Chicken Tenders Quinoa Bowl so you have more time to go out and play with your dogs, children, grandchildren, and friends.
Herb Chicken Tenders Quinoa Bowl Healthy Recipe
(Makes 4 servings)
Ingredients:
1 cup fresh salad greens
½ cup cherry tomatoes, halved
1 avocado, sliced
1 cup cooked quinoa
1 1/3 cup cooked French lentils
1 pound chicken tenders
2 Tablespoons fresh tarragon or thyme
2 Tablespoons good quality olive oil
4 teaspoons white balsamic vinegar
½ tsp. salt (optional)
Instructions:
- Cook quinoa ahead following cooking directions on package.
- Cook French green lentils ahead following cooking directions on package.
- Cook chicken tenders ahead: sautee in pan on medium heat with 1 T olive oil. Cook on first side for 3 minutes and turn over when browned. Add fresh herbs to each tender pressing into tender. Cook 3 minutes on other side until browned, season to taste and set aside.
- Immediately before serving: warm lentils and quinoa.
- Then assemble each bowl, laying salad greens on bottom, then add lentils and quinoa on one side. Then add tomatoes and avocadoes and serve with a splash of olive oil and vinegar.
